Mustard Microgreen Pesto

2 cups mustard (hot or mild) microgreens- from 2 grown Ugrogreens kits 2 TBSp chopped garlic cloves 2 TBSp pine nuts 2-3 TBSp extra-virgin olive oil 1 TBSp fresh squeezed lemon juice 1/2 cup freshly grated parmesan cheese pinch of sea salt to tate


Place Ugrogreens Microgreens in a your ninja blender or food processor. Add garlic Cloves, Pine nuts, and lemon juice and pulse a few times to chop and blend well.

Add the parmesan and slowly add the olive oil while pulsing to reach the consistency you desire.


Serve this delicious Pesto on grilled Salmon- absolutely delicious!! Also try it on pasta or as a topping for your favorite crackers or naan bread.
